Instant Pot series - Dhaba style chicken briyani - Tandoori Chicken Dum Briyani recipe

Me and Briyani, Briyani and me. Best love story ever.

In continuation of my instant pot series, I want to make dum briyani. Usually dum briyani i prepare for potlucks or guests visiting us. Mostly I prepare gravy in cooker and put dum in oven using aluminium tray. I hope this Instant Pot make my work easy and this is the first time I prepare dum briyani in Instant Pot. 

We had dhaba style briyani near my office, usually we go there alternative friday lunch.

Ingredients

  • Chicken - 1 kg
  • Basmati rice - 3 cups
  • Water - 3 (1:1 Instant Pot)
  • Ginger garlic paste - 2 tbsp
  • Coconut oil - 2 tbsp
  • Ghee - 1 tbsp
  • Onion - 2 large
  • Tomatoes - 1
  • Green Chili - 4
  • Chili powder - 1 tbsp
  • Turmeric Powder - 1 tsp
  • Mint leaves - hand some
  • Corriander leaves for garnish
  • Salt as per taste

Method

To make Briyani masala
  • Cinnamon sticks -3
  • Bay leaf - 4
  • Cumin seeds - 2 tbsp
  • Fennel Seeds - 1 tbsp
  • Kalpaasi - 5
  • Cloves - 5
  • Star anise - 3
  • Cardamom - 3
  • Pepper - 6 to 10 (depends on your spice level)
  • Grind all the ingredients under briyani masala and keep aside.
 To make Tandoori Drumstick chicken

To make half cooked rice
  • Boil water in a big utensil of your choice.
  • Add 2 drops oil, salt and few whole garam masala spices.
  • Add basmatic rice to boiling water. After few minutes rice grains starts to come to the top. This is the right time to rice is half cooked. Test the rice by squeezing and it feel hard not mushy.
  • Drain the water and set aside.
 To make dum using Instant Pot
  • Turn on SAUTE mode on Instant Pot and add oil. 
  • Once oil gets heated, add onions and deep fry. Keep aside the fried onions.
  • Heat oil and add onions and saute for while.
  • Add ginger garlic paste and tomatoes.
  • Adjust temperature of SAUTE to LOW to prevent from bottom burns. 
  • Add tandoori chicken and mix it.
  •  Fry the mix for 5 mins. 
  •  Add 2 tbsp of briyani masala and mix well. Add salt and do taste check.
  • Add half cooked rice like layer.
  • Spread the fried onions on the top.
  • Hit CANCEL.
  • Close the lid on the pot, and turn valve from VENTING to SEALING position.
  • Set the pot to SLOW COOK and set timer to 30 minutes.
  • Do a natural pressure release,  that is wait until silver button on lid drops. BE CAREFUL OF HOT STEAM.
  • Hit CANCEL. Ready to serve with raita.

Mix well



Add briyani masala

Mix well

Half cook rice

Use filter

Use filter

Drain rice

Layer the rice over briyani sauce

Spread fried onions

After 30 mins slow cook, open the lid
