Kambhu Dosa always goes well with coconut chutney or tomato chutney. Always we gets bored stuck routine with Idly and dosa, many think of doing diet and give healthy food to family but stick with white idly and dosa. Most of us have common questions, is rice dosa really worth on diet days. For you guys, I can give this recipe as solution. Millets have rich fibre compared to rice. I used kambhu for today's recipe but you can replace it with any millets of your choice.


Kids love this kambhu dosa taste. Hope you guys try it and let me know in comments.





Ingredients

  • Kambhu -2 cups
  • Idly Rice - 1 cup
  • Urad dal - 1/2 cup 
  • Fenugreek seeds - 1 tsp
  • Salt as taste

How to make dosa batter

  1. Wash and soak the millet, urad dal, rice and fenugreek in a vessel, wash and thoroughly and soak for atleast 4 hrs.
  2. After 4 hours, drain water and add it to the wet grinder. Grind all together until nice smooth fluffy batter. Take this batter in a big bowl.
  3. Add 2 tbsp of salt and mix the batter well with hands.
  4. Set this batter for fermentation for about 8 hours or overnight. Keep the batter in the warm place that quickens the fermentation process.
  5. After 8 hours, the batter have ermentated and raised up. Kambu Dosa batter is now ready!
  6. Allow it to set for 15 - 20 mins, rava absorbs water. After 20 mins, check the consistency and add 1 cup water.

Prepare dosa in hot tawa

  1. Spread the oil and pour batter on hot dosa pan.
  2. Lower the flame and cook it turns crispy and golden.
  3. Fold the dosa and serve with chutney or sambar.

Ingredients

  • Matta Rice / Red Rice - 1.5 cup
  • Moong dal / Pasiparuppu - 1/2 cup
  • Cumin seeds - 1 tsp
  • Coconut milk - 1 cup
  • Water - 5 cups
  • Salt as per taste

Method

  1. Dry roast the rice and dal. Then wash rice atleast 3 to 4 times and pasiparuppu well. 
  2.  Open instant pot and add rice, dal, cumin seeds and water and mix it.
  3. Close the lid. Hit PRESSURE COOK and set time for 10 mins.
  4. Allow the pressure releases naturally and open the lid.
  5. Add salt and coconut milk and mix well.
  6. Serve kanji with sambal or any thogayal.

Healthy breakfast is the great kick off to start the best day. I might skip lunch or dinner, but never skip the breakfast. I tell everyone the same. Omelette is a low carb, gluten free recipe with fresh ingredients.




Omelettes are so easy to make and only require a few ingredients, to turn out for great taste. This is  filling and gives you the energy you need to get going.



Ingredients

  • Eggs - 3
  • Grated cheese - 2 tbsp
  • Vegetables as per your choice
  • Salt - a pinch
  • Pepper - 1tsp
  • Butter - 2 tsp

Method

  1. Saute the vegetables using 1 tsp of butter and keep aside. 
  2. Take a bowl and beat 3 eggs with a fork and season with salt and pepper.
  3. Melt the butter in the frying pan. Add the egg mixture to the pan and spread it out evenly. When it starts to firm up, but still has a bit of raw on top, add sauted vegetables and grated cheese at half side.
  4. Fold the omelette and allow it cook for both sides for another 1 min. Serve hot.

Vegan Lo Mein recipe - Noodles are one of kids favorite things to eat. It is the easy way to kids enjoy the veggies and packed with lots of flavor. Recent days I make noodles and pasta more often using my Instant Pot. This recipe literally take only 20 mins. The best part of this recipe is you cook everything in one pot includes noodles too 😁.

Whenever I think about one pot meal, noodles and pasta coming into mind. Cooking noodles and pasta in Instant Pot is life changing. Whoever don’t care about pressure cooking their noodles and pasta instant pot is the best option I say.



Ingredients

  • Olive oil - 2 tbsp
  • Onion - 1
  • Garlic chopped - 4 pods
  • Ginger chopped - 1 inch
  • Carrots sliced - 2
  • Bell Pepper sliced - 1
  • Water or broth - 2 cups
  • Wheat Spaghetti - 4 oz  (If you use general one double the spaghetti quantity)
  • Salt - 1/4 tsp
  • Handful of green onions and coriander

For the sauce

  • Soy sauce - 2 tbsp
  • Vegetarian oyster sauce - 2 tbsp
  • Rice vinegar - 1 tbsp
  • Chili garlic sauce - 1 tsp
  • Sesame oil - 1 tsp
  • Brown sugar - 1 tbsp
  • Black pepper powder - 1/4 tsp
  • In a measuring jar or bowl, whisk together all the ingredients. Set it aside.

Method

  1. Press the saute button on the Instant Pot and then press the adjust button to set saute to less.
  2. After beep sound, add oil. After 20 secs add onion, chopped garlic and ginger.
  3. Cook for 3 minutes and then add the carrots and red pepper. Cook 30 seconds.
  4. Add the water or broth. Break the spaghetti noodles in half and then arrange them on top in cross manner. Pour the prepared sauce on top.
  5. Using spatula press (careful not to break) the noodles so that it become little wet.
  6. Close the instant pot with lid. Press the pressure cook button and set for 5 mins timer on high pressure, move the pressure valve to the sealing position.
  7. Once cooked, manually release all the pressure. Don't wait for natural release, we don't want to overcook the noodles.
  8. Add handful of spring onions, coriander leaves and close the lid for 2 mins.
  9. Stir it and serve hot.

  • Green gram / Pachai payaru - 1/2 cup
  • Garlic crushed - 1 tbsp
  • Fenugreek seeds - 1 tsp
  • Onion - 1/2
  • Pepper corns - 10
  • Red chili - 2
  • Coconut milk - 1 cup
  • Curry leaves - 1 string
  • Water - 3 cups
  • Salt as per taste

Method

  1. Wash rice and green gram well. Add the rice and dal mix in it.
  2. Add garlic, onion, pepper, fenugreek seeds and red chili in instant pot. Add water and mix it.
  3. Close the lid. Hit PRESSURE COOK and set time for 8 mins.
  4. Allow the pressure releases naturally and open the lid.
  5. Add salt and coconut milk and mix well.
  6. Serve kanji with chamanthi or any thogayal.

Instant pot Beans Pasta recipe - This pasta with kidney beans is the perfect and quick meal for weeknights. It's fully protein package recipe. The best part of this recipe is you cook everything in one pot includes pasta too 😁. I derived this recipe from Mexican dish - Taco pasta with black beans recipe. I replaced the Mexican spices with our Indian spices. Pasta are always a hit with kids. It is a unique way to get your meal done with minimal work and with your favorite ingredients. It's one of the perfect dishes for potlucks, gatherings, and any family occasion.


Ingredients

  • Rotini /  Fusilli Pasta - 1 cup
  • Kidney Beans  dried - 1 cup
  • Bell pepper - 1/2 cup (Red I used in this recipe)
  • Green chili - 2
  • Onion - 1
  • Olive oil - 2 tbsp
  • Crushed ginger - 1 tbsp
  • Crushed garlic - 1 tbsp
  • Indian masala - 1 tbsp
  • Kashmiri chili powder - 1/2 tbsp
  • Handful of coriander leaves 
  • Mozzarella cheese - 1/2 cup grated
  • Avocado  - 1
  • Salt as per taste
  • Water - 2 cups

Instructions

  1. Soak the dry kidney beans in water for 6 - 8 hrs or overnight.
  2. Turn on the saute button of the instant pot. Once you hear beep sound add oil, garlic, onions, pepper, soaked kidney beans, ginger, garlic, green chili, salt, chili powder and masala powder.  Mix everything well and saute for a min.
  3. Add pasta and water. Mix well and add a handful of coriander.
  4. Close the instant pot with lid. Press the pressure cook button and set for 5 mins timer on high pressure, move the pressure valve to the sealing position.
  5. Once cooked, manually release all the pressure. Dont wait for natural release, we don't want to overcook the pasta.
  6.  Add avocado pieces and grated cheese on top. Close with normal lid for 2 mins or until the cheese melts.
  7.  Stir it and serve hot.
