 Happiness is hot soup on a cold day!!!

 
Mutton Bone soup a very authentic soup recipe from Southern part of India, mostly this can make for kids, if they takes weekly once it helps to strong their bones and high calcium food. Also it helps for cold and cough. Mostly everyone makes more spicy but my version is medium spice with great flavoured. Mutton bones have more fat packed with good minerals. 


Fall started at my place. Its beautiful views on parks and mountains but I terribly missed my trekking this year. On lazy fall days dinner, I want my dinner to cook in minutes. If you know me already, I'm fond of my instant pot and make it use for everyday meal prep. Its just 15 mins (including cutting veggies) to get our soup ready in bowl. Guys you too try and let me know in comments how it turned out.

Ingredients

  • Goat bones and Legs - 1 kg
  • Onions - 1
  • Tomato - 1 
  • Garlic ginger paste - 2 tbsp
  • Cumin seeds - 1/2 tsp 
  • Fennel seeds - 1/2 tsp 
  • Turmeric powder - 1/2 tsp 
  • Salt - As per taste 
  • Water - 3 cups
  • Pepper powder - 1 tsp
  • A handful of Coriander leaves 

Method

  1. Switch on the instant pot and add all the ingredients except  pepper powder and coriander leaves.
  2. Close with a lid and set valve to sealing position.
  3. Hit SOUP/BROTH option. Set timer for 10 mins.
  4.  Allow the pressure gets released naturally then open the pot.
  5. Garnish with coriander leaves.
  6.  Strain and serve the clear soup. Add salt and pepper as per taste. 





 

 
 
 




 
Drumstick Leaves packed with nutrients, natural antioxidants and anti-inflammatory compounds. It has all the essential amino acids needed for the body and is said to treat more than 100 diseases. This drumstick leaves soup is easy to cook using pressure cooker. Let's see how to make drumstick leaves soup.



Ingredients

  • Drumstick Leaves - 1cup
  • Moong dal - 2 tbsp 
  • Tomato - 1/2
  • Onion - 1/2
  • Garlic Pods - 3
  • Cumin seeds - 1 tsp
  • Fennel seeds - 1 tsp
  • Pepper powder 1 tbsp
  • Green chili -1
  • Turmeric Powder  – 1 tsp
  • Water – 3 cups
  • Coriander Leaves / Curry Leaves
  • Gingelly oil - 1 tbsp
  • Salt as per taste

Method

  1. Take a pressure cooker add all the ingredients and cover it. 
  2. Pressure cook it for 3 whistles, on simmer mode for 5 mins, turn off the heat and let the cooker do natural pressure release.
  3. Now open the cooker and a Mix well. 
  4. Filter it and grind the unfiltered stuffs.  Mix all together.
  5. Add gingelly oil and serve hot.

Today we covering the simple and easy peasy method. For the winter sunday, I want to prepare this recipe. Guys you too try and let me know in comments how it turned out.




Ingredients

  • Aatu Kaal / Goat Legs - 1/2 kg (2 legs)
  • Pearl Onions - 10 peeled
  • Tomato - 1 
  • Garlic ginger paste - 1 tbsp
  • Cumin seeds - 1/2 tsp 
  • Fennel seeds - 1/2 tsp 
  • Turmeric powder - 1/2 tsp 
  • Salt - As per taste 
  • Water - 3 cups
  • Pepper powder - 1 tsp
  • A handful of Coriander leaves 

Method

  1. Take pressure cooker and add all the ingredients except  pepper powder and coriander leaves.
  2. Close the cooker with a lid and place on flame.
  3. After the steam starts out of the nozzle, place the whistle and simmer the flame. 
  4. Cook on low flame for 30 - 35 minutes / 12 - 15 whistles and remove from flame. 
  5.  Allow the pressure gets released naturally then remove the whistle and open the cooker.
  6. Garnish with coriander leaves.
  7.  Strain and serve the clear soup. Add salt and pepper as per taste.

Kollu Rasam is generally we have to soak in water overnight and pressure cooker it and then grind and add to make rasam. But today I'm sharing you the  fool proof method which we have to fry the kollu  and grind with other ingredients use for rasam. The best meal never completes without rasam. Also it ease the digestion after heavy meal.


I make this quite a lot of ways but this is my favorite and fool proof recipe. Don't allow to boil rasam, once the foam layer statred you get to know rasam will start to boil in seconds. That is the time you have to add seasoned and close it so that aroma remains inside.



Ingredients

  • Tomatoes – 1/2 chopped
  • Turmeric Powder - 1/2 tsp
  • Tamarind Pulp – 2 tbsp
  • Garlic – 2 pods crushed
  • Water – 3 cups
  • Coriander Leaves a handful
  • Salt to taste

For Grinding

  • Kollu/Horse gram fried - 1 tbsp
  • Cumin Seeds  - 1 tsp
  • Fennel seeds - 1/2 tsp
  • Green chilli - 1
  • Tomato - 1
  • Pepper - 8
  • Corrainder seeds - 1 tsp
  • Curry leaves - 1 string

For Seasoning

  • Oil – 1 tbsp
  • Mustard Seeds, Urad dal - 1 tsp
  • Asafoetida – a pinch
  • Curry leaves – 1 string

Method

  1. Take For Grinding ingredients in a blender and make it into a fine puree.
  2. Take a bowl and add in the ground masala, tamarind pulp, turmeric, tomatoes chopped, crushed garlic, salt and water.
  3. Add the mixture in sauce pan or manpanai, I prefer manpanai it tastes awesome.
  4. Allow it to cook before boil time that is foam layer formation. 
  5. On other side,  take small sauce pan. Heat oil, add in mustard once it splutters, add asafoetida and curry leaves. Saute for 10 sec.
  6. Once the foam layer formed, add seasoning and close with lid. Switch off the flame.
Grind all ingredients

Crush 2 garlic pods
Put together in a bowl

Add salt as per taste
Add turmeric
Allow to cook until foam layer

Once foam layer formed, immediately add seasoning

Add seasoning, close the lid and switch off the flame
Country chicken soup is very flavorful. This is an excellent way to clear your cold. Its very comforting to drink when you are not keeping well and very easy to digest too. I'm using mainly the chicken bones with little flesh. I have used a whole chicken for this recipe.



There are many ways to make soup. I used the pressure cooker method which is the easiest way to make chicken stock. The bones get completely cooked and all the flavors gets released into the soup. We must use turmeric which is antibiotic and salt for making this naatu kozhi rasam.


Ingredients

  • Nattu Kozhi - 1 small sized full chicken
  • Ginger Garlic Paste - 2 tsp
  • Cumin seeds - 1 tsp
  • Fennel seeds - 1 tsp
  • Pepper powder 1 tbsp
  • Green chili - 4
  • Turmeric Powder  – 1 tsp
  • Water – 3 cups
  • Coriander Leaves 
  • Gingelly oil - 1 tbsp
  • Salt as per taste

Method

  1. Take a pressure cooker add all the ingredients and cover it.
