Vegan Lo Mein recipe - Noodles are one of kids favorite things to eat. It is the easy way to kids enjoy the veggies and packed with lots of flavor. Recent days I make noodles and pasta more often using my Instant Pot. This recipe literally take only 20 mins. The best part of this recipe is you cook everything in one pot includes noodles too 😁.

Whenever I think about one pot meal, noodles and pasta coming into mind. Cooking noodles and pasta in Instant Pot is life changing. Whoever don’t care about pressure cooking their noodles and pasta instant pot is the best option I say.



Ingredients

  • Olive oil - 2 tbsp
  • Onion - 1
  • Garlic chopped - 4 pods
  • Ginger chopped - 1 inch
  • Carrots sliced - 2
  • Bell Pepper sliced - 1
  • Water or broth - 2 cups
  • Wheat Spaghetti - 4 oz  (If you use general one double the spaghetti quantity)
  • Salt - 1/4 tsp
  • Handful of green onions and coriander

For the sauce

  • Soy sauce - 2 tbsp
  • Vegetarian oyster sauce - 2 tbsp
  • Rice vinegar - 1 tbsp
  • Chili garlic sauce - 1 tsp
  • Sesame oil - 1 tsp
  • Brown sugar - 1 tbsp
  • Black pepper powder - 1/4 tsp
  • In a measuring jar or bowl, whisk together all the ingredients. Set it aside.

Method

  1. Press the saute button on the Instant Pot and then press the adjust button to set saute to less.
  2. After beep sound, add oil. After 20 secs add onion, chopped garlic and ginger.
  3. Cook for 3 minutes and then add the carrots and red pepper. Cook 30 seconds.
  4. Add the water or broth. Break the spaghetti noodles in half and then arrange them on top in cross manner. Pour the prepared sauce on top.
  5. Using spatula press (careful not to break) the noodles so that it become little wet.
  6. Close the instant pot with lid. Press the pressure cook button and set for 5 mins timer on high pressure, move the pressure valve to the sealing position.
  7. Once cooked, manually release all the pressure. Don't wait for natural release, we don't want to overcook the noodles.
  8. Add handful of spring onions, coriander leaves and close the lid for 2 mins.
  9. Stir it and serve hot.

Break spaghetti into half, place crossly. Add prepared sauce.

  • Garlic crushed - 1 tbsp
  • Fenugreek seeds - 1 tsp
  • Onion - 1/2
  • Pepper corns - 10
  • Red chili - 2
  • Coconut milk - 1 cup
  • Curry leaves - 1 string
  • Water - 3 cups
  • Salt as per taste

Method

  1. Wash rice and green gram well. Add the rice and dal mix in it.
  2. Add garlic, onion, pepper, fenugreek seeds and red chili in instant pot. Add water and mix it.
  3. Close the lid. Hit PRESSURE COOK and set time for 8 mins.
  4. Allow the pressure releases naturally and open the lid.
  5. Add salt and coconut milk and mix well.
  6. Serve kanji with chamanthi or any thogayal.

Farming is my favorite and dreamy job for me. I started to explain "Germination" process to my kid right after his 4th birthday. To get detailed knowledge about farming I taken him to farm land where we can pick our own vegetables and fruits. He enjoyed his best. He was excited to say this is sweet peas plants. He can't believe it comes from plants because we get only frozen green peas at grocery stores. Finally he gets idea grocery store is not the place to grow veggies 😂



Okay friends, coming back to today's recipe, Quick and easy peas sabzi or peas masala which taste super delicious. This goes great with poori or roti or pulao. Hope you guys try and let me know in comments.



Ingredients

  • Green Peas - 2 cups
  • Cumin seeds - 1 tsp
  • Fennel Seeds  - 1 tsp
  • Cinnamon stick - 1 inch
  • Onion - 1
  • Green Chilies - 2
  • Oil - 2 tbsp
  • Salt to taste
  • Water - 1 cup

Grind Masala

  • Tomato - 2
  • Cashews - 10
  • Chili Powder - 1 tbsp
  • Turmeric Powder - ½ tsp
  • Garam Masala Powder - 2 tsp
  • Coconut - 1/2 cup
  • Garlic pods - 4
  • Ginger - 1 inch
  • Grind all the ingredients and keep aside.

Method

  1. Heat oil in a pan, add cumin, fennel seeds and cinnamon. Let them sizzle.
  2. Add in onions, green chilies and saute till golden.
  3. Add grind puree, salt and cook till oil separates.
  4. Add green peas, water and cook for 5 mins on medium to low heat.
  5. Transfer to bowl and serve.

Meatballs (Kola Urundai) prepared by my Grandma always a perfect with crispy outer and well cooked meaty content inside. On my childhood days, I used to enjoy the outer crispy and leave the meaty content. Its hard to replicate the same taste by me.

Vaazhaipoo Kola Urundai, this idea I get from my kid, he said the other day I made vaazhaipoo vada, he said I want this as ball sandwich (like falafel sandwich he meant), there I got this idea at the same time I dont want to add chickpeas with vaazhaipoo, separately both tastes great but I'm not sure how both tastes together. Let me try that culinary sins next time😛. My husband in fact thought they were Minced meat Kola Urundai until I told him that it is made of Vazhaipoo 😉. Now I have plans to make this for potluck or guests visit. 


Ingredients

  • Vaazhaipoo/ Plaintain flower - 1
  • Channa dal - 1 cup
  • Onion - 1
  • Cumin seeds - 1 tsp
  • Fennel seeds - 1 tsp
  • Red Chilies - 6
  • Garlic pods - 2
  • Asafoetida - 1/2 tsp
  • Handful of coriander and curry leaves
  • Salt as per taste
  • Oil for deep frying

How to clean florets 

  1. Keep a large bowl of thin buttermilk. We add our banana florets into the buttermilk to stop them changing dark.
  2. Remove the outer layers of the banana flower. You will see a row of smaller florets in each layer removal. Discard the pink outer layer you just removed.
  3. Open the each floret you can see a long filament with small bulb on top. Remove that strand. In bottom side you see one small flap and remove that too. The remaining parts put into the buttermilk.
  4. Once you reach the center of the flower, you can see a white solid piece. This portion is also edible. 

How to grind and deep fry

  1. Soak channa dal and red chilies for atleast one hour. Clean the plaintain flower thoroughly wash the florets in water
  2. Add soaked dal, red chilies and garlic and grind it coarsely without adding water.Add the cleaned plaintain florets and grind them coarsely.
  3. Take a bowl and add grinded mixture, onions, cumin seeds, fennel seeds, asafoetida, coriander, curry leaves and salt. Mix well and make the balls like falafel.
  4. Heat oil in a pan. Deep fry until it turns to brown crispy texture.

  • Water to soak

How to use hair pack

Step 1 - Soak hair pack on previous night

  • Soak fenugreek seeds and green gram in water for atleast 10 - 12 hrs before apply.
  • They doubled or tripled in the size so take less quantity in raw.
  • Blend it to smooth paste with adding little by little soaked water.

Step 2 - Apply hair oil

  • Hair pack makes your hair and scalp sometimes dry.
  • Apply and massage the good amount of oil before using hair pack.

Step 3 - Wrap hot towel

  • Take towel and dip into hot water.
  • Wrap it around the hair, it helps the hair oil infused with your hair. 
 Step 4 - Apply DIY hair pack
  • Section your hair and apply hair pack using fingers.
  • Make sure you applied the pack for scalp and every strands of the hair. 
  • Apply from scalp or roots to ends of hair. 
  • Leave it for 20 - 30 mins. Wash off with shampoo and no need of using conditioner.
