Funnel Cake always a favorite for anyone at American carnivals. Always at summer carnivals my son went for 2 rides then he wants to get snacks, he named the funnel cake as carnival cake. So every time he asks about carnival cake, I respond will get on summer times.
Now using this recipe, funnel cakes can easily be prepared at home any time of year. The batter is simple and the frying time is quicker than pancakes. Funnel cakes are really fun to make and kids are excited to eat this. Throughout the year we can surprise the kids at anytime. To make the batter my son helped me. Hope you guys don't mind my son hands in process photos.

Ingredients

  • Eggs - 2
  • Milk - 1 cup
  • All purpose flour - 2 cups
  • Baking powder - 1 tsp
  • Salt - 1/2 tsp
  • Oil for frying
  • Powdered sugar for dusting

Method

  1. Take a bowl, whisk together the eggs and milk.
  2. In another large bowl, combine the flour, sugar, salt, and baking powder.
  3. Combine the wet and dry ingredients. Whisk it thoroughly.
  4. Heat oil in a pan.
  5. Over the hot oil to make a pattern, start from outer edge and ends to the center of the pan. Fry for 2 to 3 minutes, or until brown. 
  6. Flip over and fry for 2 mins on the other side.
  7. Serve the funnel cakes immediately with the powdered sugar.
Take milk in a bowl

Add eggs

Whisk it

Add all dry ingredients


Whisk thoroughly.

Use cake decor tool to make pattern.

Fry for 2 - 3 mins.

Flip and deep fry the other side.

Ready to serve.







 

Mochai Kulambhu is very authentic recipe at my place. We pick the green mochai from farm land and do pooja on pongal day early morning and make this kulambhu for pongal lunch. Pal pongal and mochai kulambhu is the best combination. Along with sweet pongal we make dry mochai payaru that's awesome combination.

Today we going to see the mochai kulambhu which I used the dried ones. Here I never get fresh green mochai, even for pongal time I used to make from dry mochai.

Ingredients

  • Mochai - 1 cup
  • Green Mirchi - 2 
  • Chilli Powder - 1 tbsp
  • Coriander Powder - 2 tbsp
  • Turmeric Powder -1 tsp
  • Homemade Tamarind paste - 1 tbsp
  • Water as needed
  • Salt to taste
  • Jaggery to taste

For Roasting & Grinding:

  • Cumin Seeds - 2 tsp
  • Fennel Seeds  - 1 tsp
  • Onion - 1
  • Tomato - 1
  • Garlic - 3
  • Coconut - ½ cup grated

 For Seasoning:

  • Mustard Seeds - 1 tsp
  • Urad dal  - 1 tsp
  • Curry leaves - a handful

Method

  1. Soak mochai overnight. Take it in a cooker and add  water. Pressure cook for 3 whistles. Let pressure goes by itself. Set aside.
  2. Heat coconut oil in a pan.  Coconut oil always enhances the taste of meal.
  3. Add onions, garlic and tomatoes. Saute for 2 mins. Add cumin, fennel seeds,  coconut and stir fry for 3 to 4 mins. Grind it as puree till smooth.
  4. Heat oil in the same pan, Add in mustard, urad dal and curry leaves. Let them sizzle.
  5. Add green mirchi, chilli powder, corriander powder, turmeric, salt and mix well.
  6. Add in tamarind paste, water, ground masala and salt. Allow it to boil, simmer for 15 mins till oil seperates.
  7. Ready to serve.
Soak overnight and pressure cook for 3 whistles.

Add coconut oil

Add onions, garlic and tomatoes.

Add coconut, cumin seeds and fennel seeds.

Saute it well.

Once cool down, grind it.
Heat coconut oil

Add mustard seeds and urad dal.

Add curry leaves and green mirchi.
Add all spice powders

Add water as required.
Add Tamarind paste.

Allow to boil for 15 mins

Add jaggery after the oil seperates.

Its ready.

Why we need Homemade Chocolate Syrup

Making your own chocolate syrup is a simple process of combining basic and available ingredients that most people have in their pantry.  In general everyone use cocoa powder but everytime at my pantry I cant find cocoa powder instead my son drinks chocolate milk everyday, so nesquik is easiest option for me.

Uses for Homemade Chocolate Syrup

  • Dip – Sliced fruits, marshmallows, plain crackers, etc.
  • Drizzle – Cakes, ice creams, pancakes and more.
  • Drink – Chocolate milk, milkshakes, or even hot chocolate.

Ingredients

  • Nesquik Chocolate Powder - 1 cup
  •  Water - 1 cup
  • A pinch of salt
  • Butter - 1/4 cup
  • Vanilla - 1 tsp

Method

  1. Take a saucepan, sieve chocolate powder.
  2. Whisk together the chocolate powder and the water until all lumps are removed.
  3. Add the salt and bring to a boil over medium to medium-high heat.
  4. Once it starts to boil, add butter and whisk.
  5. Reduce to a simmer.  stirring constantly. Simmer for about 30 seconds and then remove from heat.
  6. Let cool and then add vanilla essence which is optional. After it cools, pour into squeeze bottle and refrigerate until needed.

Sieve the chocolate powder

Check the lumps

Add water

Add pinch of salt
Whisk together

Boil on medium flame

On simmer mode, add Butter

Cool down, Store and refrigerate.
Ready to serve
