Nonbu Kanji is porridge usually prepares at the time of Ramadan days to break the fast in the evening. This recipe I got from my childhood friend's mom. Usually she prepares using Noi arisi, which sells at the time of Ramadan fasting days. In my own recipe I used seeraga samba rice which is smaller in size compared to other rices. If you use basmati rice put it blender and grind coarsely.



During my school years every year I got this from my friends home, they told they get from pallivasal which tastes more delicious than homemade. My friend told many families everyday gives rice and dal to pallivasal on fasting days they prepare with the variety mix of rices and spices so that it tastes awesome. After few years at my workplace home, one of my neighbors did this fasting and she shared this kanji. After I return my work, she gives kanji with some non veg appetizer. Me and my husband will complete in few minutes. Once we moved out of the country really missing these peoples love badly.

Here is the recipe for authentic Nombu Kanji. Hope you guys try and let me know.

Ingredients

  • Oil - 1 tbsp
  • Ghee - 1 tbsp
  • Cloves - 3
  • Cardamom - 3
  • Cinnamon - 1 inch 
  • Fenugreek seeds - 1 tsp
  • Onion - 1
  • Crushed ginger garlic - 1 tbsp
  • Green chili - 2
  • Tomatoes - 1
  • Minced meat / kothu kari - 1 cup
  • Seeraga samba rice - 3/4 cup
  • Moong dal - 1/2 cup
  • Coconut Milk - 1 cup
  • Water - 3 cups
  • A handful of corriander leaves
  • Salt as taste

Method

  1. Soak rice and dal together for 15 mins. After 15 mins, hand-crush and keep aside.
  2. Heat oil in a pressure cooker and add cloves, cardamom, cinnamon and fenugreek.Add onions and saute it. Add crushed ginger garlic, green chili, tomatoes and salt. Saute it for 2 mins.
  3. Add minced meat, soaked rice and dal.  Add water, coriander leaves and close the lid. Allow it to 5 - 7 whistles.
  4. After natural release the pressure, open the lid. Add coconut milk and mix it well. Do taste check and adjust salt. Serve with hot pakodas.

Madurai kari dosa - I'm really fond of this dosa from childhood days. I grew up with typical madurai foods. But my kid doesn't get that chances so I want him also get to know all tamil cuisines which I had. At my place, we have indian restaurants but no shop have kari dosa. Whenever I prepare keema masala the same day dinner must be kari dosa. It goes well with chutney or mutton kulambhu.


Ingredients

  • Dosa batter
  • Eggs beaten
  • Mutton Keema masala - Recipe I already shared
  • Oil for dosa
  • Curry leaves

Method

  1. Heat the dosa pan and spread dosa batter thick. 
  2. Add one beaten egg and add keema masala. Allow it to cook on medium flame. Add curry leaves.
  3. Carefully turn the other side and cooked.
  4. Transfer to the plate and serve it.


Mutton Keema curry is usually served with plain rice, roti, chapathi or can use for stuff inside paratha or samosas or wraps. 

Ramadan month is running just want to share few mutton keema recipes this week. Any mutton lovers should try this recipe. If you kids doesn't like to eat mutton pieces, try with mutton keema definitely they loves it.

  • Mutton keema - 1/2 kg
  • Onion - 1
  • Tomato - 1
  • Green chili - 2
  • Red chili powder - 1 tbsp
  • Coriander powder - 2 tbsp
  • Turmeric powder - 1 tsp
  • Garam masala powder - 1/2 tbsp
  • Ginger garlic paste - 1 tbsp
  • Oil - 2 tbsp
  • Bay leaf -3 small
  • Cinnamon - 1 full
  • Cumin seeds - 1 tsp
  • Salt as taste
  • Handful of coriander leaves  

Method 

  1. Wash the mutton keema twice, drain water using filter and keep aside.
  2. Heat oil in a pressure cooker, add bay leaves, cinnamon and cumin seeds.
  3. Once it splutters, add onions and saute it. Add tomatoes, ginger garlic paste, green chili and saute it until tomatoes gets mushy.
  4. Add all spice powders and add it. Saute it until oil seperates. 
  5. Add mutton keema, salt and saute for a min. Add 1/2 cup water.
  6. Close the lid and allow it to 4 whistles.
  7. Once the pressure releases boil for few minutes. Do taste check here and adjust salt.
  8. Add handful of coriander leaves and transfer it to bowl.

  • Ginger - 1 inch
  • Rice flour - 1/2 cup
  • Wheat flour - 1/2 cup
  • Rava - 1/2 cup
  • Onion - 1
  • Cumin seeds - 1 tsp
  • Fennel seeds - 1/2 tsp
  • Water - 3 cups
  • Corriander / curry leaves
  • Salt as taste

How to make dosa batter

  1. Grind tomatoes, red chili, ginger into smooth paste without adding water.
  2. Transfer to the mixing bowl.
  3. Add rava, rice flour and wheat flour.
  4. Add 2 cups of water and mix well into batter consistency.
  5. Add chopped onions, salt, cumin seeds, fennel seeds. Mix it.
  6. Allow it to set for 15 - 20 mins, rava absorbs water. After 20 mins, check the consistency and add 1 cup water.

Prepare dosa in hot tawa

  1. Spread the oil and pour batter on hot dosa pan.
  2. Lower the flame and cook it turns crispy and golden.
  3. Fold the dosa and serve with chutney or sambar.

Hello friends! 

After few successful weeks, today 51st day of stay at home. I hope you are all safe. Today is the 2nd day of May, 2020. Almost the spring comes to an end. It's nice to be at home, I get more time to cook my favorites and do culinary sins at my kitchen.  After these many days, the weather gets better and its right time to get physically active. 

At my place the neighborhood state park opened with few restrictions. They allowed public to do walking, cycling. This year the peak spring time I missed badly but still I got to walk out at the end of spring to see beautiful cherry blossom along with leaves. The moment I feel refreshed to watch cherry blossoms trees. I always suggest my friends to talk a walk to get some fresh air and relax your mind. Fresh air does wonders to our body and mind. Also regulates blood pressure and immune system. Better to get off the sofa or office chair and leave your house to do a long walk. I shared few photos of cherry blossoms, dandelions and lilac bush here. Live the moments.

Lock down period is the hardest one facing by all over the world. Mostly we working from home, missing schools, missing colleges, missing to hang out with friends, losing jobs, overall missing our daily routines or life. But still our life moves on. Spread positive vibes and hope the best will happen to the universe.
