Vegetable Noodles Recipe with Indian Spices is a quick dinner recipe. It goes best with any manchurian or any fried veggies or chicken balls. It takes just 15 - 20 minutes to cook. You can use any vegetables as your choice. I want to make this as kid-friendly recipe so that I avoid chili sauce instead you can add ketchup and sugar.

Ingredients
- Plain Noodles - 200 gm
- Oil - 3 tbsp
- Ginger - 1 inch crushed
- Garlic - 6 pods
- Onion - 1
- Capsicum - 1/2
- Spring Onion - a handful chopped
- Carrot - 2
- Any vegetables of your choice
- Turmeric - 1/4 tsp
- Chili Powder - 1/2 tsp
- Coriander Powder - 1 tsp
- Soy Sauce - 1 tsp
- Ketchup - 1 tbsp
- Sugar – 1 tsp
- Salt as per taste
Method
- Boil the water in saucepan, add in salt and add the noodles and cook for 8 mins or as per package instructions. Drain the water and rinse in cold water for 15 secs. Add a tbsp of oil and toss well. Set aside.
- Heat oil in a big pan. Add onions and garlic then saute it.
- Add the crushed ginger, vegetables and saute it.
- Add turmeric, chili powder and coriander powder.
- Add soy sauce, ketchup and saute again for few more mins.
- Now add in noodles and saute for 5 mins.
- Toss well and ready to serve.
