Culinary Sin series: Broccoli Veggies Pasta - Quick pasta recipe

Indian  style flavourful pasta is my new temptations so its one of my culinary sins 😜. Today I'm sharing you a very simple and easy pasta and we prepare in 20 mins. I say its mom-friendly recipe, sounds funny 😂, its true because its good for after school snacks and husband's lunch box. We can consider this for quick dinner idea for family.



 Ingredients

  • Shell Pasta - 2 cups
  • Vegetables as your choice - 1 cup (cut veggies)
  • Broccoli - 1/2 cup florets
  • Onion - 1 medium
  •  Garlic - 6
  • Ginger - 1 inch
  • Olive oil - 1 tbsp
  • Green mirchi - 1
  • Salt as per taste
  • Tomatoes - 1
  • Turmeric - 1 tsp
  • Chili powder - 1 tsp
  • Cilantro / Corriander leaves and Parmesan cheese for garnish. Usually i don't prefer cheese because I include in everyday snacks for my kid.

Method

  1. Boil pasta in lots of water  as per package directions. Drain it and keep aside.
  2.  Grind the garlic, ginger, tumeric, chili powder, mirchi and tomato using blender. Keep aside.
  3. Heat olive oil in a frying pan.
  4. Add onion and fry it.
  5. Add all the vegetables and fry it for 1 min. Add salt.
  6. Add broccoli florets and fry for 2 mins.
  7. Close lid and cook for 2 mins.
  8. DO NOT OVERCOOK the vegetables.
  9. Pour the grinded paste and allow to boil for 1 min.
  10. Switch off the flame.
  11. Add cooked pasta to this mixture. Mix well.
  12. Garnish it and serve.
Cook pasta and keep aside. 
Grind it.

Fry onion.

Add vegetables.

Fry vegetables.
Add grind paste and allow to boil. 
Add cooked pasta.

Mix well.

Ready to serve.
