Ingredients
- Shell Pasta - 2 cups
- Vegetables as your choice - 1 cup (cut veggies)
- Broccoli - 1/2 cup florets
- Onion - 1 medium
- Garlic - 6
- Ginger - 1 inch
- Olive oil - 1 tbsp
- Green mirchi - 1
- Salt as per taste
- Tomatoes - 1
- Turmeric - 1 tsp
- Chili powder - 1 tsp
- Cilantro / Corriander leaves and Parmesan cheese for garnish. Usually i don't prefer cheese because I include in everyday snacks for my kid.
Method
- Boil pasta in lots of water as per package directions. Drain it and keep aside.
- Grind the garlic, ginger, tumeric, chili powder, mirchi and tomato using blender. Keep aside.
- Heat olive oil in a frying pan.
- Add onion and fry it.
- Add all the vegetables and fry it for 1 min. Add salt.
- Add broccoli florets and fry for 2 mins.
- Close lid and cook for 2 mins.
- DO NOT OVERCOOK the vegetables.
- Pour the grinded paste and allow to boil for 1 min.
- Switch off the flame.
- Add cooked pasta to this mixture. Mix well.
- Garnish it and serve.
