Pulikulambu with Brinjal, Drumstick and Onions

Pulikulambu with Brinjal, Drumstick and Onions is a little spicy gravy, a little gravy mixed with rice turned out a great taste and enjoy with papad. Its very simple and basic kulambhu version of my amma. Also this recipe is the saviour of emergency cooking. we can store it for few more days. Always the next day it tastes great, no need to put in refrigerator.

Ingredients

  • Onion chopped - 1 cup (pearl onions are the best)
  •  Garlic Pods - 8
  • Brinjal - 5
  • Drumstick - 6 cut pieces
  • Tamarind paste - 1 tbsp
  • Turmeric powder - 1tsp
  • Red chili powder - 1 tbsp
  • Corriander powder - 2 tbsp
  • Salt as needed
  • Sesame oil- 1 tbsp
  • Cocout oil - 2 tbsp
  • Fenugreek seeds - 1tsp
  • Cumin seeds - 1 tsp
  • Curry Leaves - 1 string

Method

  1. Heat both the oils in a pan, season with fenugreek and cumin seeds.
  2.  Add onion, curry leaves and garlic, fry them.
  3. Saute for few seconds or until translucent.
  4. Add Brinjal and drumstick, add turmeric powder, red chilli powder, corriander powder, tamarind paste and salt.
  5. Saute the vegetables and masalas and add 1 cup of water.
  6. Allow to cook for 15 mins until the vegetables cook fully.
  7. Let it simmer for 5 minutes.
  8. Serve with rice.
Season with fenugreek seeds and cumin seeds

Add onions and fry it

Add garlic pods

Add vegetables

Add all the spice masalas and tamarind paste

Add 1 cup of water

Allow it to cook for 20 mins
Ready to serve
