Vegetable Pasta - Indian masala

I have tried pasta in Chinese style 3 times before. All times, I could not make the taste like restaurants. So after that I never ever try that way :).  But later I tried with Indian spices it turned out great.  So I should stick to this recipe. Its very simple cooked with vegetables and delicious indian spices. Check here for Egg pasta

Ingredients

  • Pasta - 1 cup
  • Onion - 1
  • Tomato - 1
  • Chopped Garlic - 1 tablespoon
  • Red chilli powder - 1 tsp
  • Cut Vegetables (cut on same size) - 1/2 cup
  • Chopped capsicum - 1/4 cup
  • Turmeric powder - 1/4 tsp
  • Garam masala powder - 1/2 tsp
  • Chopped coriander leaves - 2 tblsp
  • Salt - As needed
  • Olive oil - 3 tablespoon
  • Cumin seeds - 2 tsp


Method

  1. Boil 3 cups water and add the pasta, required salt. Cook as per the package.
  2. Drain the water once the pasta cooked.
  3. Heat a kadai with oil and temper with jeera.  Once splutters, add garlic and stir it.


4. Add finely chopped onion and fry until transparent. Add vegetables and Capsicum.
5. Once vegeatbles half cooked,  add tomato, red chilli, garam masala, turmeric powders.
6. Fry until the oil separates.



7. Add the cooked pasta. Stir well for a minute and garnish with chopped coriander leaves.


This fits in perfect for lunch boxes or for dinner.
