I prepared this salad because it contains lots of fresh veggies from my kitchen garden. It is so good, and because it makes its own dressing, it's very healthy as well.
Ingredients
- Chopped cucumber - 1 cup
- Wild tomato - Cut into 2 pieces
- Cashew nuts - 2 tsp coarsely grind
- Capsicum - 1/2 cup chopped
- Broccoli - 1 cup chopped
Dressing
- Olive oil - 1 tablespoon
- Lemon juice - 1 teaspoon
- Salt - ½ teaspoon
- Black paper - 1/8 teaspoon
Method
- Dressing: In a bowl, mix all the dressing ingredients well. Set aside.
- Cut all the ingredients and mix together.
- Just before serving, add the dressing. Mix it well.
