Kambhu Dosa Recipe - Grind a batter and ferment

Kambhu Dosa always goes well with coconut chutney or tomato chutney. Always we gets bored stuck routine with Idly and dosa, many think of doing diet and give healthy food to family but stick with white idly and dosa. Most of us have common questions, is rice dosa really worth on diet days. For you guys, I can give this recipe as solution. Millets have rich fibre compared to rice. I used kambhu for today's recipe but you can replace it with any millets of your choice.

Ingredients

  • Kambhu -2 cups
  • Idly Rice - 1 cup
  • Urad dal - 1/2 cup 
  • Fenugreek seeds - 1 tsp
  • Salt as taste

How to make dosa batter

  1. Wash and soak the millet, urad dal, rice and fenugreek in a vessel, wash and thoroughly and soak for atleast 4 hrs.
  2. After 4 hours, drain water and add it to the wet grinder. Grind all together until nice smooth fluffy batter. Take this batter in a big bowl.
  3. Add 2 tbsp of salt and mix the batter well with hands.
  4. Set this batter for fermentation for about 8 hours or overnight. Keep the batter in the warm place that quickens the fermentation process.
  5. After 8 hours, the batter have ermentated and raised up. Kambu Dosa batter is now ready!
  6. Allow it to set for 15 - 20 mins, rava absorbs water. After 20 mins, check the consistency and add 1 cup water.

Prepare dosa in hot tawa

  1. Spread the oil and pour batter on hot dosa pan.
  2. Lower the flame and cook it turns crispy and golden.
  3. Fold the dosa and serve with chutney or sambar.
