Red rice Puttu is one of the famous south india recipe. Generally this goes well with any kadalai curry. It is simple recipe to make and taste so healthy and delicious. For kids serve with banana, sugar and drops of coconut oil. Hope you will give this a try and let me know how it turns out for you.

Ingredients

  • Red Rice Flour - 2 cups
  • Grated Coconut - 1 cup
  • Salt to taste
  • Warm Water - 1 cup

Instructions

  1. Mix salt with warm water.
  2. Take flour in a bowl. Add warm water little by little and mix well. The mixture should be wet and coarse.
  3. Take puttu maker. Put one hand of rice flour mix and top with coconut and then again rice flour and again coconut. 
  4. Heat water in pressure cooker and place the puttu maker on steam release portion.
  5. Cook until the steam comes out of the puttu lid, it takes approx 5 mins.
  6. Unmould and serve.

Take 2 cups of red rice flour

Add salt with warm water

Mix it coarsely

Clean and place the base in puttu maker

Fill it alternatively rice flour and coconut

Steam it on pressure cooker

Remove the lid and check it cooked



Vatha Kuzhambu - All time favourite for lunch time. Typical tamil recipe which lasts upto 3 to 4 days without refrigerate. Homemade masala added the best taste and gives fresh aroma along with tamarind sauce it comes out the awesome flavour. This manathakali have medicinal use that's you don't get mouth ulcers. If you have also it will cure. Hope you will like it, do try and let me know.




Ingredients

  • Onion – 1
  • Garlic – 6 pods
  • Cumin seeds - 1 tsp
  • fenugreek seeds - 1/4 tsp
  • ManathakkaliVathal / Black Night Shade – 2 tbsp 
  • Turmeric powder - 1 tsp
  • Tamarind paste - 4 tbsp (or lemon sized tamarind)
  • Masala podi powder - 3 tbsp
  • Gingely Oil - 3 tbsp
  • Salt to taste
  • Jaggery–  1 tsp
  • Curry Leaves - 1 string

Method

  1. Take a bowl - Add tamarind paste, turmeric powder, masala podi and salt. Mix it as a paste and keep aside.
  2. Heat 2 tbsp oil in  pan. Add cumin seeds and fenugreek seeds, once splutters add onion and saute it.
  3. Add garlic, curry leaves and saute for 5 mins.
  4. Add the paste we made on step 1. Add 2 cups of water and allow it to boil.
  5. Taste check here and adjust salt or spicy as your needs.
  6. Heat the remaining 1 tbsp oil in small pan and deep fry the vathal.
  7. Add fried vathal in that boiling kulambhu and allow it to cook on medium flame for another 10 mins until the oil seperates and form a layer.
  8. Serve with hot rice and pappad / fryums.

Add onions garlic curry leaves
Add masala paste
Add water


Deep fry the vathal
Allow it to boil

Allow it to cook for 10 mins
Garnish with coriander and serve



Vegetable Kurma is as simple and quick recipe which tastes really delicious. I have added kalpasi in this recipe which add the best tempting flavor. This was one of long waiting list to upload this kurma recipe using Instant pot. If you looking for more creamy texture add cashews along with coconut.


Ingredients

  • Black eye beans - 1 cup soaked for 6 hrs
  • Potato-2 chopped
  • Carrot - 3
  • Onion -2
  • Tomato - 1
  • Green chili - 2
  • Crushed Garlic -  1 tbsp
  • Crushed Ginger -  1 tbsp
  • Turmeric powder - 1tsp
  • Chili powder - 1 tbsp 
  • Coriander powder - 1 tbsp
  • Garam masala - 1/2 tbsp
  • Bay leaf - 1
  • Cinnamon stick - 1
  • Fennel seeds -1/2 tsp
  • Cumin seeds - 1/2 tsp
  • Cloves - 2
  • Black Stone flower (Kalpasi) - 1 piece
  • Oil-2 tbsp
  • Salt to taste
  • Coriander leaves for Garnishing

To Grind Masala
  • Coconut- 1/2 cup
  • Poppy seeds (Kasa kasa)-2 tbsp
  • Fennel seeds -1 tsp
  • Cumin seeds - 1 tsp

Method

  1. Grind all the ingredients under "To Grind Masala" and keep aside.
  2. Turn on Instant Pot. Hit SAUTE mode.
  3. Heat oil in pot. Add Bay leaf, cinnamon, fennel seeds, cumin seeds, black stone flower, cloves and let it splutter.
  4. Add onion and green chili. Fry it.
  5. Add tomatoes, ginger, garlic and do stir fry.
  6. Add turmeric powder, chili powder and coriander powder. Fry for 1 min.
  7. Add vegetables and saute it. Add 1 cup of water.
  8. Add the grinded mixture in step 1. Mix well with adding salt.
  9. Add 1 to 2 cups of water as desired.
  10. Hit CANCEL on Instant Pot.
  11. Close the lid on the pot, and turn valve from VENTING to SEALING position.
  12. Set the pot to MANUAL/PRESSURE COOK (High Pressure) and set timer to 5 minutes
  13. Do a natural pressure release,  that is wait until silver button on lid drops. BE CAREFUL OF HOT STEAM.
  14. Garnish with fresh coriander leaves and serve with Paratha or Chappathi or Roti.

Take all ingredients for seasoning
Temper in hot oil

Add onions
Add chili and tomato
Add turmeric, coriander and chili powder
Saute for 1 min
Add soaked peas, potatoes, carrots
Add 1 cup water
Add grinded mixture
Add 1 more cup of water

Horse gram is the most protein-rich high-powered lentil. Kollu sundal is best fat burner, you can add this on your diet weekly once like kollu rasam, kollu kulambhu, kollu sundal. Out of this kollu sundal contains less oil and tasty. This goes well with puttu or tea time snacks. For kids this is healthy snacks. Hope you will give this a try and let me know how it turns out for you.



Ingredients

  • Kollu / Horsegram - 1 cup
  • Turmeric powder - 1 tsp
  • Chili powder - 1 tsp
  • Onion - 1
  • Green chili - 2 
  • Mustard seeds - 1 tsp 
  • Salt as required
  • Curry leaves - 1 string
  • Corriander leaves - for garnish
  • Coconut oil - 1 tbsp

Method

  1. Soak kollu overnight or 8 hours. Pressure cook with water till immersing level of kollu for 3 whistles in medium flame. Drained water can use it for rasam.
  2. Heat coconut oil in a pan. Add mustard seeds.
  3. Once it splutters, add onions, green chili and saute it for 2 mins.
  4. Add cooked kollu toss it well.
  5. Add turmeric powder, chili powder, salt. Toss well for 1 min.
  6. Add curry leaves and coriander leaves, closed the lid and switch off the flame.

Saute onion and chili

Add cooked kollu

Add turmeric powder and chili powder

Add curry leaves
