Its March!!! Hope many of you know about the Day light saving, the first week after the timings change, its bit tough to handle specially you have school going toddlers.

How to cope with daylight savings time?
  • Early to bed
  • Morning walk as regular routine
  • Enjoy the longer evenings
  • Dont be a potato Couch 
  • Reduce screen time
These are the best I'm following.
In continuation of my last post, I'm posting today the Ridge Gourd kootu recipe.

Peerkangai Thogayal Recipe


Peerkangai kootu recipe is a healthy and tasty south indian recipe made with moong dal and coconut. This is extremely rich in dietary fiber and low in saturated fat. Kootu goes well with rice and rotis.


Ingredients

  • Ridge gourd / peerkangai - 1 
  • Moong dal - 2 tbsp
  • Turmeric powder - 1 tsp
  • Coconut grated - 1/4 cup
  • Cumin seeds - 1/4 tsp
  • Green chili - 3
  • Dry Red chilies -1
  • Grated coconut - 1/2 cup
  • Oil - 1 tbsp
  • Salt as taste
  • Oil - 1/4 tsp
  • Curry leaves - 1 sprig

Instructions

  1. Clean, peel and cut the Peerkangai. Keep aside.
  2. Heat a pan and do dry roast the Moong dal.
  3. Add turmeric, water and 2 drops of oil. Close the lid and allow it to cook for 5 mins.
  4. Once dal half cooked, add the peerkangai cubes and allow it to boil.
  5. Grind the coconut, chili, cumin seeds into a paste.
  6. Add the paste in boiling pan. Allow it to cook for another 5 mins.
  7. Seasoned with oil, mustard seeds, dry chili, curry leaves. Serve with rice or rotis.
Dry roast for 2 mins

Add water, turmeric and oil

Check its half boiled

Add peerkangai cubes

Grind coconut, chili and cumin seeds

Allow it to boil

Add grinded mixture


Season it and ready to serve

Aatukaal soup a very authentic soup recipe from Southern part of India, mostly this can make for kids, if they takes weekly once it helps to strong their bones and high calcium food. Also it helps for cold and cough. Mostly everyone makes more spicy but my version is medium spice with great flavoured. Mutton legs doesn't have more flesh but it have more fat with good minerals. 


Today we covering the simple and easy peasy method. For the winter sunday, I want to prepare this recipe. Guys you too try and let me know in comments how it turned out.




Ingredients

  • Aatu Kaal / Goat Legs - 1/2 kg (2 legs)
  • Pearl Onions - 10 peeled
  • Tomato - 1 
  • Garlic ginger paste - 1 tbsp
  • Cumin seeds - 1/2 tsp 
  • Fennel seeds - 1/2 tsp 
  • Turmeric powder - 1/2 tsp 
  • Salt - As per taste 
  • Water - 3 cups
  • Pepper powder - 1 tsp
  • A handful of Coriander leaves 

Method

  1. Take pressure cooker and add all the ingredients except  pepper powder and coriander leaves.
  2. Close the cooker with a lid and place on flame.
  3. After the steam starts out of the nozzle, place the whistle and simmer the flame. 
  4. Cook on low flame for 30 - 35 minutes / 12 - 15 whistles and remove from flame. 
  5.  Allow the pressure gets released naturally then remove the whistle and open the cooker.
  6. Garnish with coriander leaves.
  7.  Strain and serve the clear soup. Add salt and pepper as per taste.
Clean the mutton legs

Take pressure cooker and add all the ingredients except  pepper powder and coriander leaves.


Allow the pressure gets released naturally then remove the whistle and open the cooker.

Add handful of coriander leaves.

 


Add salt and pepper as per taste.
 
 
 




Salmon Fish fry with beans recipe is the delicious, hot, spicy and crispy. Its one of the healthy and easy appetizer when compared to chicken or mutton. Indian spices do not only help to add flavors, it also helps to fight against bacteria in the fish. Turmeric is not only colorant agent, it has powerful anti-inflammatory effects and is a very strong antioxidant. In India, all the non-vegetarian recipes include spices like turmeric and coriander powder that helps to reduce the stinky smell from the fish and to add flavor and aroma to the dishes.


Ingredients

  •  Salmon Fish - 1 big slice
  •  Red Chili Powder - 1 tbsp
  •  Coriander Powder - 1 tbsp
  • Turmeric Powder - 1 tsp
  •  Cumin seeds Powder -  1 tsp
  •  Fennel seeds Powder - 1 tsp
  • Ginger garlic paste - 1 tbsp
  • Onion - 1
  • Beans - 8 nos
  • Coconut Oil for frying
  • Salt as per taste

How to Marinate fish

  1. In a bowl add red chili powder, coriander powder, turmeric powder, cumin powder, fennel powder, ginger garlic paste, salt and mix well. DON'T ADD WATER or OIL or LEMON.
  2. Take one piece of fish, dip in the mix and cover it in all sides. 
  3. Repeat the step 2 for each piece separately so that the mix don't get wet and also it spreads evenly on each and every fish pieces.

Method

  1. Cut the desired shape of salmon and clean it properly.
  2. Marinate in the refrigerator for 20 mins or place in the sunlight for 20 mins.
  3. Heat oil in a dosa pan, it consumes less oil only and healthy too with slow cooking.
  4. Place the fish in the hot oil carefully. 
  5. Fry until the bottom side of the fish becomes crispy. 
  6. Flip gently and fry on the other side until crispy.
  7. Remove the fried fish from the oil and place on the paper towel-lined plate (this helps to absorb the excess oil from fish). 
  8.  Heat the pan and add the left over oil from salmon fried.
  9. Add onions and saute it for a min.
  10. Add few clean and cut beans into half sized. Saute it with onion.
  11. Once half cooked, add the fried salmon.
  12. Saute it for a min and serve.

Add all spices, salt and ginger garlic paste

Dip the salmon in mix

Spread all the sides and leave for 20 mins

Fry it

Heat pan and add left over oil
Add onions and saute it

Add beans and saute it

Saute until half cooked
Add fried salmon

Saute for 1min and switch off

New Year is around the corner! that is new goals and new planners. A new year is time to set new goals and new planner, so i feel this is the right time to create and release the FREE 2020 PRINTABLE CALENDARS. I always want to do my planner with floral design.

On 2019 spring time, we visited tulip fields at Holland Ridge farms New Jersey. As many of you know that I am fond with macro photography specially flowers. Instead of sketching I want to give try with my own photographs 😁. Hope you like my idea and enjoy the kick off calendar printable.

Me and Briyani, Briyani and me. Best love story ever.

In continuation of my instant pot series, how do I miss my favorite native Dindigul mutton briyani with freshly grinded biryani masala powder. This is really cool and easy with Instant pot. Try and let me know 😍




Ingredients


  • Mutton - 3/4 kg
  • Seeraga samba rice - 3 cups
  • Water - 3 (1:1 Instant Pot)
  • Ginger garlic paste - 2 tbsp
  • Coconut oil - 2 tbsp
  • Ghee - 1 tbsp
  • Onion - 2 large
  • Tomatoes - 1
  • Green Chili - 4
  • Chili powder - 1 tbsp
  • Turmeric Powder - 1 tsp
  • Mint leaves - hand some
  • Corriander leaves for garnish
  • Salt as per taste

Briyani masala grind:

  • Cinnamon sticks - 4
  • Bay leaf - 4
  • Cumin seeds - 2 tbsp
  • Fennel Seeds - 1 tbsp
  • Kalpaasi - 5
  • Cloves - 5
  • Star anise - 3
  • Cardamom - 3
  • Pepper - 6 to 10 (depends on your spice level)

Method


  1. Grind all the ingredients under biryani masala and keep aside.
  2. Marinate the meat with turmeric, salt, ginger garlic paste, chili powder, biryani mix, Mint and coriander leaves. Let it marinate for minimum 30 mins.
  3. Turn on SAUTE mode and add oil. 
  4. Once oil gets heated, saute bay leaves, cinnamon sticks, cloves, cardamom, cumin and fennel seeds (this is optional to put all, we already have everything in grinded mixture, personally I like more flavored:))
  5. Once it splutters, add onions and saute for while.
  6. Add marinated meat and tomatoes.
  7. Adjust temperature of SAUTE to LOW to prevent from bottom burns. 
  8. Add green chilis.
  9. Fry the mix for 5 mins. Add 1 cup water and close the lid.
  10. Hit CANCEL.
  11. Turn on POULTRY mode for 5 mins.
  12. Open the Instant Pot and check the meat cooked fully, if not you can add more minutes. For me, it was cooked.
  13. Add rice and remaining water 2 cups.
  14. Taste the salt taste and add. 
  15. Garnish the corriander and close the lid.
  16. Close the lid on the pot, and turn valve from VENTING to SEALING position.
  17. Set the pot to MANUAL/PRESSURE COOK (High Pressure) and set timer to 5 minutes
  18. Do a natural pressure release,  that is wait until silver button on lid drops. BE CAREFUL OF HOT STEAM.
  19. Hit CANCEL. Ready to serve with raita.

Clean the mutton

Add spices and fry

Fry onions

Add the marinated chicken 


Add tomatoes

Add green chilies


Fry for 5 mins

After cook on poultry mode for 5 mins

Add rice

Add water and coriander

Briyani ready after 5 mins pressure cooker mode

Ready to serve
