Stuffed paratha is very common recipe, but stuffing may vary. Its very easy method to make our kids to eat. Today we see one more healthy kids recipe. Yes most of the kids like peanut butter. Here we use the stuffing as kids favorite Peanut butter. This is good for carry on pack and lunch box.  Today I use potatoes and carrots combination. Hope you guys like it. Most of the kids likes bread because of jam or peanut butter. So just think about healthy version, instead of store bought bread we use our paratha dough 😇

Ingredients

For the stuffing

  • Peanuts Butter - 1 tbsp
  • Palm jaggery - 1 tsp

For dough

  • Wheat flour - 1/4 cup
  • Salt as per taste
  • Water as required
  • Few drops of oil to knead 

Method

To make the stuffing

  1. Roast the peanuts.
  2. Add homemade butter and do coarse grind. (I prepare and store in refrigerator)
  3. Take 1 tbsp of peanut butter.
  4. Add 1 tsp of jaggery on it.

To make dough

  1. Take wheat flour in a wide mixing bowl.
  2. Add salt, water and oil.
  3. Add water and start mixing the flour.
  4. Initially the dough may look and feel sticky. Add few drops of oil and knead the dough well.
  5. Let the dough rest for minimum 10 minutes before rolling it. 

 To make paratha

  • Take a small ball size dough and press lightly between your palms.
  • Dip in dry flour/oil and roll it to 5 to 6 inch circle.
  • Add filling and gather the sides.
  • Gently press the dough and filling to flatten it.
  • Dip in dry flour again and start rolling it lightly.
  • Roll it gently to form 8 inch diameter circle.
  • Roll more parathas before fry it on dosa pan.
  • Gently put paratha on hot pan.
  • Flip and fry for a minute, and brush some oil on second side too.
  • Fry on both sides and serve hot.
Take peanut butter from refrigerator and allow to reduce room temp

Ready to serve

Today I'm sharing my yummy ever favourite sweet. On my childhood, my mom give this as side dish for chapathi and parathas. She roll the chapathis with the stuffed caramelized banana. During my pregnancy journey, this is one of my cravings 😁😋. Hope you will like it and let me know what you think about it.


Ingredients

  • Nendrapazham Banana - 2
  • Honey - 1 tbsp
  • Butter - 1 tbsp

Method

  1. Peel and cut the bananas as your desired shape.
  2. Heat Butter and honey. 
  3. Once butter melts, add bananas and toss well.
  4. Cook for 5-10 mins on simmer mode, until it is nicely caramelized and golden. 
  5. Serve with icecream and dessert toppings.


Add honey and butter


Take 2 bananas

Cut into desired shape



Toss it well

Toss until golden brown

Ready to serve

Milk many cows but make your own butter.   
Funny quote 😆  I read somewhere these quote, want to use this in my post, now its right time to use it 😀. Butter plays vital role in our daily life. This recipe requires only 20 minutes of your time and so much better than the store-bought.

Method

  1. Boil the milk (I use farm milk), wait until the milk temperature dropped to warm. 
  2. Add 1/2 tsp curd or yogurt to the milk. Close with lid.
  3. Keep aside for 6-8 hrs or overnight at room temperature.
  4. Now you can see milk becomes curd/yogurt.
  5. Place that yogurt in a large bowl. Beat with an electric or hand blender.
  6. Keep whisking until the butter starts to come together, the time takes around 15 - 20 mins. For me, it taken 20 mins.
  7. Butter floats at the top as fluffy bits.
  8. Use filter to separate the butter and buttermilk. 
  9. Allow cool water to flow through the filter for 1 min. (We washing our butter here)
  10. Store your fresh butter in refrigerator for future use.

Me and Briyani, Briyani and me. Best love story ever.

In continuation of my instant pot series, I want to make dum briyani. Usually dum briyani i prepare for potlucks or guests visiting us. Mostly I prepare gravy in cooker and put dum in oven using aluminium tray. I hope this Instant Pot make my work easy and this is the first time I prepare dum briyani in Instant Pot. 

We had dhaba style briyani near my office, usually we go there alternative friday lunch. 



This is really cool and easy with Instant pot. Try and let me know 😍

Ingredients

  • Chicken - 1 kg
  • Basmati rice - 3 cups
  • Water - 3 (1:1 Instant Pot)
  • Ginger garlic paste - 2 tbsp
  • Coconut oil - 2 tbsp
  • Ghee - 1 tbsp
  • Onion - 2 large
  • Tomatoes - 1
  • Green Chili - 4
  • Chili powder - 1 tbsp
  • Turmeric Powder - 1 tsp
  • Mint leaves - hand some
  • Corriander leaves for garnish
  • Salt as per taste

Method

To make Briyani masala
  • Cinnamon sticks -3
  • Bay leaf - 4
  • Cumin seeds - 2 tbsp
  • Fennel Seeds - 1 tbsp
  • Kalpaasi - 5
  • Cloves - 5
  • Star anise - 3
  • Cardamom - 3
  • Pepper - 6 to 10 (depends on your spice level)
  • Grind all the ingredients under briyani masala and keep aside.
 To make Tandoori Drumstick chicken
  • Here is the link of Tandoori Chicken recipe.
To make half cooked rice
  • Boil water in a big utensil of your choice.
  • Add 2 drops oil, salt and few whole garam masala spices.
  • Add basmatic rice to boiling water. After few minutes rice grains starts to come to the top. This is the right time to rice is half cooked. Test the rice by squeezing and it feel hard not mushy.
  • Drain the water and set aside.
 To make dum using Instant Pot
  • Turn on SAUTE mode on Instant Pot and add oil. 
  • Once oil gets heated, add onions and deep fry. Keep aside the fried onions.
  • Heat oil and add onions and saute for while.
  • Add ginger garlic paste and tomatoes.
  • Adjust temperature of SAUTE to LOW to prevent from bottom burns. 
  • Add tandoori chicken and mix it.
  •  Fry the mix for 5 mins. 
  •  Add 2 tbsp of briyani masala and mix well. Add salt and do taste check.
  • Add half cooked rice like layer.
  • Spread the fried onions on the top.
  • Hit CANCEL.
  • Close the lid on the pot, and turn valve from VENTING to SEALING position.
  • Set the pot to SLOW COOK and set timer to 30 minutes.
  • Do a natural pressure release,  that is wait until silver button on lid drops. BE CAREFUL OF HOT STEAM.
  • Hit CANCEL. Ready to serve with raita.

Add tandoori chicken

Mix well

Half cook rice

Use filter

Layer the rice over briyani sauce
